German Extra Hardy garlic is a vigorous growing hard neck garlic producing long roots that enable it to overwinter without heaving out of the ground. The outer skin is ivory-white with occasional red tones, but the clove skin is dark red. German Extra Hardy garlic has a robust raw flavor, a high sugar content, and is considered one of the very best for roasting. A late harvesting garlic, each bulb yields 4-7 cloves.

HOW TO GROW GARLIC: Plant only the largest individual cloves; eat the smaller ones! Plant the individual cloves into rich, loose soil 6 inches apart in rows 1 foot or more apart . Plant about 2 inches below the soil line, with the plump, rounded side down and pointy end up. A heavy layer of mulch is recommended. When planting in cold areas where the ground freezes, plant 4-6 weeks before the freeze occurs to give the garlic time to establish good root development. In the spring keep your garlic bed well weeded and water as you would for any leafy green vegetable. When the leaves begin to turn brown but there are still 3-4 green leaves left, pull up the bulb and, with the leaves still attached, let it dry in the sun for a few hours. Then spread it out in a dry, well-ventilated place until the leaves are papery, usually 2 or three weeks depending on relative humidity. Cut the leaves off after the curing process and store the bulbs in a cool, dry, well-ventilated location.
